Will there be a difference in sound quality if I store my music on a nas vs directly on my Mac when streaming to my receiver wirelessly?
No difference. You can leave the files on the NAS.

And one more! Will I get better SQ if I stream wired vs wireless?
That depends on many factors, including implementation. The general consensus is that the wired connection is at least more reliable if not better sounding.
